The season of harvest is upon us. Whether you pick pole or bush beans or maybe both, you know that its bean time! While nothing is like that first freshly picked bean, you have to understand that they all cannot be eaten raw. Like many other vegetables in our harvest these too have to be preserved. This preservation is going to make for an incredible treat later in the colder months.
Do you have to can green beans? You most certainly can but blanching will help them retain more of their bite. This is a great article on the blanching of green beans and how to freeze them for a later date. The supermarket does not have this technology cornered. We all have a freezer and the ability to boil water. If you like some crunch left in your food, I would encourage you to try this blanche and freeze method.
